With its fortified entrance and circular layout, the village center—nicknamed “lo cagarol”—has retained its medieval character. Here, in the cool, narrow streets, history is etched into the stones, shaped by time or by the tools of local stonemasons. Dominique Saillard, a tour guide and lecturer, will lead a twilight tour starting from the cooperative winery.
