One side surrounded by small canyons (combes) which, from the Haut-Minervois, faces southwards over some fifty hectares at an altitude of between 200 and 300 metres.
Since the end of the 15th century, the Miquel family has running the 60 hectares of the estate, 27 of which are devoted to vines. Muscat petit grain, with 17 hectares, occupies a special place. Vinified at low temperature, their colour varies from pale yellow to deep orange. The aromas are diverse: dried peppery flowers, candied citrus fruits, orange, quince, honey or white flowers... a palette of flavours to be served with desserts, foie gras and fish.
The other grape varieties - grenache, carignan and syrah - are used to make rosé and red wines. Vinified traditionally or by carbonic maceration, matured in oak or in tanks, they are suitable for red meats, games, cheese and charcuterie.
